Khao Suey - From Burma with love
Khao Suey (noodles in coconut curried sauce) is a hearty Burmese dish that is almost ubiquitous in Karachi now. There are countless versions found of the dish and everyone swears by their own. This noodle dish served is in mildly spiced coconut milk and the toppings makes for a delicious one-dish lunch/dinner.

Ingredients:

230 grams egg noodles
2 large chicken breasts, cubed
1 tablespoon garlic, grated
1 tablespoon ginger, grated
5 onions
6 tomatoes
1 teaspoon cumin seeds
1 teaspoon red chilli powder
2 cans coconut milk
1 teaspoon salt
1 teaspoon turmeric powder
½ lime
3 tablespoons gram flour

For toppings:

6 eggs
2-3 green onions
Lime wedges
Papri
6 cloves of garlic

Method:

- Start by cutting the chicken breasts into bite sized pieces. Then put oil in a pan, add garlic, ginger and chicken to it. As soon as the chicken is golden brown set aside.

- In a blender, add tomatoes and onions (fried till golden brown) and blend with a little water. Add this mixture to the chicken and let it simmer.

- Let it cook till the chicken is tender, add all the spices to it and then add coconut milk.

- Once you gauge what the consistency of the curry should be, add gram flour to a glass of water and mix into the curry. Let it simmer for another few minutes and your curry is ready.

- Boil the egg noodles as required. For the condiments, boil the eggs and slice them. Cut the lime wedges and slice the cloves of garlic and fry till golden brown. Slice the green onions and papri is added as is.
